It is not a bar and it is not haute cuisine. It’s in a market but it’s not cheap: it’s popular and pleasantly pop. Human prices, superhuman creativity.
In the Milanese gastronomic scene, increasingly crowded and competitive, there are places capable of distinguishing themselves not for size or clamour, but for design intelligence and absolute quality. Alba Pasta Bar is one of them: a tiny address in size, but surprisingly large in idea and execution.
Inside the Isola Market, a former municipal market now transformed into one of the most interesting gastronomic hubs in the city, a project is taking shape that redefines the concept of fresh pasta in Milan.
The counter kitchen has a starry flavor

It is not a bar and it is not haute cuisine. It’s in a market but it’s not cheap: it’s popular and pleasantly pop. Human prices, superhuman creativity. Fresh pasta, which gives its name to the restaurant, is only the starting point of a much broader and more conscious cuisine.
Alba Pasta Bar is a little gem. There are only three seats at the counter, a kitchen set within the walls of what was once a municipal market, all in sight, all close together.
The proposal: the differences between lunch and evening
The project is signed by Francesco Brasile and Tommaso Sorgentone, two former students of Niko Romito who, after years among starred kitchens, have chosen the authentic dimension of the market. A few square meters, equipment wedged like in a tetris, precise and coordinated movements. Francesco and Tommaso’s cuisine is technical, readable, never self-referential.
At lunch, the menu is designed for those who live in the city with the stopwatch in hand. A “Milanese” proposal: fresh and stuffed pasta, essential side dishes, honest prices. Try the square spaghetti with tuna and lemon roe, cleaned and citrusy, or the one with porcini mushrooms, shiitake and precision-worked chiodini. The semolina ravioli with ricotta and spinach is comfortable and impeccable, which tastes like home but speaks the language of haute cuisine.
In the evening: simplicity that surprises
While remaining true to himself, in the evening the menu changes, . Simplicity and technique meet without forcing. An example? Roasted carrot with strained yogurt, lemon capers and sumac, a vegetable dish of great balance. The tongue boiled and then plated, with green sauce and fresh horseradish, an exercise in contemporary classicism. To close a dessert that surprises, the basil panna cotta with confit cherry tomatoes and lemon. In three words: fresh, fragrant, memorable.

A new generation of Milanese cuisine
Alba Pasta Bar tells the story of a new generation of chefs: trained in haute cuisine, but capable of bringing precision and gastronomic thinking to an everyday and accessible context. A small place, inside a market, with big and very clear ideas.
