There is more and more experimentation and innovation in the world of large leavened goods. In the last few years the quality level of panettone, the leavened goods par excellence of the Christmas season, has improved considerably throughout Italy. These are the words spoken by master pastry chef Iginio Massari at the award ceremony of the ‘Panettoni senza confini‘ competition last October on wich we agree. Daniel Canzian presents MassaBon

After panettone MI.O del 2022 this year, Daniel Canzian offers his new version of panettone with MassaBon.

Named after a Venetian dialect term for ‘too good‘, MassaBon is a roasted apricot panettone made with natural sourdough starter. It is proposed by Albertengo and can be purchased in the online boutique and physically at the restaurant having the same name in via Castelfidardo in Milan.

The Limited edition ones made in Cannavacciuolo

Chef Antonino Cannavacciuolo‘s haute patisserie workshop offers, on the occasion of the arrival of Christmas 2023, two new limited edition panettone cakes, created by the pastry chef Kabir Godi.

  • The first novelty is the Hazelnut and Lemon panettone, with hazelnut cremini enclosed in the soft dough, as a tribute to the two regions Cannavacciuolo loves better, Piedmont and Campania.
  • The Marron Glacés panettone covered with almond icing, on the other hand, is a tribute to autumn.

Olivieri 1882 and Gerla

Interesting limited editions for Olivieri 1882, a historic artisan confectionery from Veneto: panettone with balsamic Modena vinegar IGT. Produced in collaboration with the historic vinegar producer Carandini from Emilia, it offers an elegant mix of sweet and balsamic.

It has also won a competition organised by officine Dario Pegoretti , the pumpkin and dark chocolate panettone panettone with Madagascar bourbon vanilla inside.

The historic Gerla 1927 pastry shop, in the heart of Turin, offers three versions of panettone created by Evi Pallotto, executive pastry chef. From the classic recipe to the one with chocolate drops to the Marron Glacé with chestnut cream and marron glacé pieces.

Giovanni Cova & Co: panettone cakes dedicated to Giuseppe Verdi

Giovanni Cova & co. this year dedicate their Christmas cake collection with two new gourmet panettone cakes to Giuseppe Verdi. The occasion is the 210th anniversary of his birth. Among the products, the two new gourmet panettone proposals stand out:

  1. the cremino panettone filled with gianduja covered in dark chocolate
  2. the strawberry and white chocolate panettone with strawberries and green pepper.

The homage to Verdi made thanks to the collaboration with the Archivio storico Ricordi, lies in the wrappings that depict some of the details of the costumes of his operas – mid 19th and early 20th century – as well as the iconic portrait of the composer on the metal box.

It continues inside the boxes with a postcard-size reproduction of 5 different watercolours by the famous illustrator Leopoldo Metlicovitz. They represent the atmosphere of Villa Sant’Agata, Giuseppe Verdi’s home. To complete the collection, each box contains a bookmark with a signature taken from the Maestro’s autographed cards kept in the archive.

A historic confectionery company, Vergani has remained the only company to produce the Milan Panettone in the Lombard capital. Panettone and solidarity thoughts

There are many solidarity initiatives for the Christmas period, and panettone is also a major player. Until 20 December, fourteen pastry shops in Milan are offering suspended panettone to help those in need.
