The 18th edition of the International Congress of Cuisine, Pastry, Mixology and Dining Service in Milan
On 18 January 2023 morning, the 18th edition of Identità Golose Milano was presented at the Identità Golose Milano hub. It is the most important international cooking, pastry, mixology and dining service Congress in Italy and one of the most prestigious in the world.
Many anticipations and novelties were unveiled during the launch press conference. Starting with the theme ‘Ladies and gentlemen, the revolution is served‘, which is anything but free from interpretation, it is clear that this will be a truly revolutionary edition.

Among the participants were: Alessia Cappello, Councillor for Economic Development and Labour Policies with responsibility for Trade, Fashion and Design of the Municipality of Milan, and the ABC of Italian Cuisine.
There were four of the most famous leading figures on the culinary scene: Andrea Aprea, Enrico Bartolini, Massimo Bottura and Carlo Cracco. The latter being the author, together with Luca Sacchi, of this year’s signature dish, “Avocado, kiwi e coriandolo”.‘.

New thematic areas of 2023 edition
New thematic areas will complement the existing more traditional ones, with the presence of leading personalities from the world of food and wine, but also from television and culture. It will be an edition full of surprises, curiosities and new ideas for reflection and dialogue, aiming to be representative of the revolution that is taking place, with increasing urgency, in the entire cooking and catering sector.

are some of the great guests who will come to Milan, bringing their testimonies and reflections from all over the world, to offer points of view that transcend national borders.
Together with them, many celebrities of Italian cuisine, but not ony: in fact among the speakers there will also be personalities such as Fabio Fazio. He will share the stage with Corrado Assenza on Monday 30 January, in the Auditorium hall, and the participation of Bruno Vespa in Golosi di Identità, the new format in collaboration with the Cotarella Foundation to promote and support habits, studies and cures for a healthy and balanced diet, scheduled for Sunday 29 January.

Among the new features of this edition is also the Italian final of the S.Pellegrino Young Chef Academy Competition 2022-2023, the international project created by the S.Pellegrino Young Chef Academy to discover and cultivate the talents of the future. On Saturday 28 January, inside the Spazio Arena, 10 young talents will compete in the preparation of their signature dish, which will be evaluated by a jury composed of 5 top Italian chefs: Andrea Aprea, Donato Ascani, Giuseppe Iannotti, Viviana Varese, and Jessica Rosval, to choose the young chef who will represent Italy at the international final.
Closing the Spazio Arena programme, on Monday 30 January some of Italy’s best bartenders, together with chefs and pizza chefs, will animate Identità Cocktail, the section in collaboration with Bibite Sanpellegrino and Perrier dedicated to new trends in mixology and its link with the catering world.
The exhibition area will be no less important, the fulcrum of special initiatives, previews and opportunities for sharing, that will involve the commercial realities that have embraced the initiative, sharing the objective of giving life to and cultivating positive relations between the protagonists of the sector. The 18th edition of Identità Milano 2023 also enjoys the patronage of the Municipality of Milan and the participation of the Lombardy Region – General Directorate for Agriculture, Food and Green Systems, and ERSAF – Regional Agency for Services to Agriculture and Forests.
