Anima restaurant receives the Michelin star

First star for Anima, Enrico Bartolini’s fine dining restaurant led by chef Michele Cobuzzi inside the Hotel Milano Verticale | UNA Esperienze

Milan, 11.11.2022. – The 2023 edition of the “gourmets’ bible” awards one star to Anima, the fine dining restaurant opened by Enrico Bartolini at the end of May 2021 inside the Hotel Milano Verticale | UNA Esperienze and skillfully run since October of the same year by Chef Resident Michele Cobuzzi. Born in 1989, Michele Cobuzzi also runs the kitchen of Vertigo Osteria Contemporanea and Bar con Giardino, also inside the hotel.

What about Chef Cobuzzi

Chef Cobuzzi, from Apulia, got into the world of cooking thanks to his family. Growing up in the countryside in close touch with nature, since childhood he learnt from his parents the love for genuine raw materials and agriculture.

On the family farm, surrounded by olive groves, fruit trees, vegetables and animals, Michele soon developed a tendency to take care of the ingredients, to wait and respect the rhythms of nature and to appreciate a simple and genuine cuisine that respects the land. It was from his mother that he learnt his first traditional Apulian recipes.

Passion and determination, combined with creativity, led him to enrol in the hotel-management school in Foggia and to work in restaurants from the age of 14.

Michele Cobuzzi’s career

His journey in the gastronomic world has touched almost all Italian regions with a short experience abroad, in Ireland.

With great masters and important collaborations: from the one, at only 23 years of age, with Gordon Ramsey in Siena (in the La Contrada Restaurant), to the kitchen of the Bracali Restaurant (Michelin) in Maremma.

These were followed by other high-level experiences: in Milan at Il luogo Aimo e Nadia (Michelin) and at the Enoteca Pinchiorri in Florence (***Michelin).

As Resident Chef at Anima, Michele Cobuzzi interprets Enrico Bartolini’s gastronomic message narrating the rich heritage of Italian tradition with modern taste.

The gastronomic itineraries

In Anima, seven tables open only in the evening (also to outsiders), the chef offers two gastronomic iteneraries:

  • Intensità” in eight passages – €150 excluding drinks – with the possibility of opting for three or four courses à la carte, at €90 and €110 respectively)
  • Le mie certezze” (“a course of small greatnesses” in five passages – 125 euros, excluding drinks)
